Eight - ten Whiting fillets
1 cup buttermilk
1 package instant potato flakes
2 tsp. salt
1 tsp. black pepper
Oil for frying
Tartar sauce
Lemon quarters

Directions:
Directions:
Clean and fillet the fish being careful to remove all skin and bones.
Soak the fillets in buttermilk for 30 minutes.
Heat oil to medium high heat in a skillet or heavy saucepan.
Add salt and pepper to the instant potato flakes. Remove each fillet from the buttermilk and coat with the instant potatoes. Immediately place into hot oil and fry until golden brown (3-5 minutes). Cook in batches if needed.
Serve with lemon slices and tartar sauce.

Whiting are the most common fish we catch in the surf on North Padre Island at Island House. They are otherwise known as the Southern Kingfish and are quite tasty.
