2 tablespoons oil
3-5 cloves garlic, minced
1/2 - 1 jalapeno, chopped
1/2 sweet onion, diced
3/4 each of red pepper, orange pepper and yellow pepper, diced
Ground Pepper
1 6oz can tomato paste
1-2 tablespoons chili pepper
2 ounces chili or Mexican dark chocolate (Can use plain high cocoa chocolate if can't find)
1-2 teaspoons oregano
1/2 teaspoon cumin
6 cups chicken stock
1 pound ground meat - beef, turkey or chicken. (Can also use small beef tips-my preference)
1 can fire roasted diced tomatoes
2-3 small tomatoes - diced
2 tablespoons light brown sugar
1 can chili beans
1 cup red wine

Directions:
Directions:
Heat olive oil in dutch oven

Add garlic and jalapeno and ground pepper. Cook for 1 min

Add onions and peppers. Cook until tender--5-7 min

Cook the meat in a separate skillet

Stir in tomato paste, chili powder, oregano, chocolate and cumin into dutch oven

Continue stirring until brick-red in color (~2 min)

Add chicken stock, tomatoes, meat, brown sugar and beans to dutch oven. Stir

Add wine

Bring to a boil. lower to simmer and cook for 45 min - 1 hr--partly covered

Serve with tortilla chips or corn bread, sour cream, shredded cheese, and cilantro. Hot sauce if you want

This ends up with more of a soup than a chili texture. It tastes a lot better than looking at the recipe implies
