8 medium - red potatoes
4 slices - bacon, diced
2 - eggs
½ c. - sugar
½ c. - cider vinegar
¼ tsp. - black pepper
¼ tsp. - dry mustard
1 c. - celery, diced
2 tsp. - salt
½ c. - bread & butter pickles, chopped OR omit & add sweet onions

About 1 hour & 15 minutes before serving: In a 5 qt. pan over high heat bring potatoes and salt to a boil. Reduce heat and simmer for 30 minutes or until tender. Peel and cube. In a 3 qt. saucepan, over medium low heat, cook the diced bacon. Meanwhile, in a small bowl mix the eggs, sugar, vinegar, pepper, mustard, & salt. With a slotted spoon, remove bacon to paper towels. Stir egg mixture into bacon drippings. (Don't have the bacon grease too hot.) Cook stirring constantly until sauce is just thickened but not boiling. Add potatoes, pickles (or onion), celery, and bacon. Gently toss to coat well. Makes 6 servings.
