8 cups Rhubarb, cut up
4 Eggs
3 cups Sugar
4 tbsp Flour
½ - 1 tsp cinnamon

Directions:
Directions:
Place rhubarb into a 9 . 13 lightly greased cake pan.
Mix eggs, sugar and flour together and pour over rhubarb.
Sprinkle with cinnamon.


CRUMBLE TOPPING

1 cup Butter or Margarine
1 cup Brown Sugar, packed firmly
2 cups flour

Mix butter, brown sugar and flour until crumbly. Spread on top flour mixture.

Bake 350º for 40 - 45 minutes or until top is golden brown.
Serve warm or cold.

If you would like more crumbles on top double the topping mixture.
This recipe also works well with Tart Apples.
