White bread stuffing mix - or dry your own - will need about 2 pounds - cut into 1/2 inch pieces

1 or 2 sticks of butter - use as much as you need to cook the vegetables - start with one stick and add more if needed - it helps add moisture to the bread mix
You can add more or you can make up the moisture with the broth

one large onion - finely chopped - you can use less if you don't like much onion
2-3 large stalks of celery - finely chopped (I really like to chop the "leaves" too)
1 - 2 tsp salt. (or more - to your taste)
1 tsp pepper (or more - to your taste)
1+ Tbsp sage (more if you like)
6 cups chicken broth - if you have cooked the giblets of the turkey you can add some of that water to the mixture along with the broth

Directions:
Put dried bread in a LARGE bowl
Melt butter in a large skillet over medium low heat.
Add onions and celery to skillet, and cook until vegetables are softened - 12 to 15 minutes.
Stir in the sage, salt and pepper.
taste the mixture as you are seasoning and adjust to what you like
Pour the vegetable mixture into bread and mix well.
Add chicken broth a little at a time and stir well....continue adding broth until mixture is moist - a little more moist than you think -
Taste and add more seasoning if you want,.
Put bread/vegetable mixture in to a baking dish/pan - bake until top is crispy and warmed inside. May take up to an hour to bake,

This is a really hard recipe to write because it depends on how many you are feeding, how much bread you use, what seasonings you like,
It's really a "taste as you go" kind of recipe!
It was always different EVERY time!
