Cake Dough
I cup of unsalted butter
2/3 cup of white sugar
1 pkg vanilla sugar
2 tbsp milk
1 whole egg
4 egg yolks
1 cup flour
2 tsp of baking powder

Meringue Cake topping
4 egg whites
3/4 cup white sugar
1 pkg vanilla sugar

Middle layer

500ml whipping cream
3 cans drained Mandarin oranges or 21/2 cup fresh berries

Preheat oven to 350º
Grease and flour 2 -10” springform pans.

Cake Dough
Mix butter, sugar and vanilla sugar in large bowl with a mixer, add 1 egg and mix well. Add in 4 egg yolks, one at a time , mixing well in between. Add in milk and mix well..
Mix together in separate bowl, flour and baking powder then add slowly add to egg mixture, mixing well. Spread evenly in bottom of both pans

Meringue Cake topping
In medium bowl, whip egg whites until stiff, add sugar and vanilla sugar and whip until stiff. Should resemble marshmallow topping in a jar. Spread over cake dough in each pan.
Bake for 35-45 minutes, until meringue is browned all over.
Cut one cake into pie shape, usually 10 or 12 pieces Cool both cakes.

Middle layer
Whip cream till very stiff and add 2 tbsp of white sugar whipping again til forms peaks.

Assembling cake

Spread half whip on bottom of cake, then spread fruit on top, cover with remaining whip cream. Top with remaining cake pieces. Serve and enjoy
