1 large or 2 small pkgs. lime Jell-O
1 cup boiling water
1 (8-oz.) pkg. cream cheese
1 (3-oz.) pkg. cream cheese
1 large can crushed pineapple, well drained
1 cup chopped walnuts

Directions:
Directions:
1 Add 1 cup boiling water to Jell-O. Stir until dissolved.
2 Add a little less than 1-1/2 cups cold water and a few ice cubes to make 1-1/2 cups; chill until it starts to set – like jelly.
3 Place bowl of Jell-O on top of ice in larger bowl. Using an electric mixer on medium speed, whip softened* cream cheese into Jell-O a little at a time. If Jell-O becomes runny again, place in refrigerator until it starts to get like jelly again.
4 Add pineapple and nuts. Pour into square or oblong glass baking dish, or use jell-o mold**. Chill until set.

*To soften cream cheese: Place completely unwrapped package of cream cheese on microwavable plate. Microwave on HIGH 15-20 seconds or until slightly softened.

**To unmold gelatin: Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.
