1/4 cup Caster (superfine) sugar
Zest from 1 lemon

Martini
4 oz (1/2 cup) quality vodka, we use Stoli Gold; we also like Absolut Citron
1 1/2 oz (3 Tbs) Cointreau or Triple Sec (we prefer Triple Sec)
2 oz (4 Tbs) fresh squeezed lemon juice (about the amount from a large lemon)
1 1/2 oz (3 Tbs) simple syrup, see our recipe for simple syrup
Crushed Ice

Put the martini glasses in the freezer or fill with crushed ice to chill while preparing drink. Your vodka should be stored in your freezer and already be cold.

Make the lemon sugar. With 1/4 cup scoop pour caster sugar to a plate and then use the scoop to push out of the center of plate to make a ring of sugar about the diameter of the martini glass rims. Rub the zest into the sugar with your fingers until tinted yellow and fragrant.

Moisten the rim of the chilled martini glass with a quarter slice of lemon held over both the inside and outside edge of rim, turn the glass upside down and twist into the lemon sugar, and set aside.

Add vodka, Cointreau (or Triple Sec), lemon juice, simple syrup and a 1/2 cup crushed ice to a cocktail shaker. Shake until very cold, or it sounds like all the ice has melted. Strain into the prepared martini glasses and serve immediately.

Simple syrup is 1 cup water and 1 cup white sugar. Bring to a boil, stir until clear. Turn off burner and allow to cool. Store in refrigerator in a squeeze bottle.
