Five cups water
1 cup dry brown, green lentils, washed and picked through
1 large onion, chopped
⅓ cup burghul (cracked wheat) OR ½ cup long grain rice
Olive Oil
1 ½ tsp. salt

Directions:
Directions:
Cook the lentils in the 5 cups boiling water for 15 minutes.
Carmelize the onion in the olive oil and add to the cooked lentils.
Add the burghul or rice and salt, cover and simmer on medium - low heat for 25 minutes.

Mikey's Aunt Najla shared this recipe with me many years ago. The Elsaifi kids ate it often before growing all of their teeth, It is a vegetarian dish high in protein.
