2 cups Half and Half
1/2 Shallot
4 sprigs Thyme
1 Bay leaf
3 cloves Garlic
4 lbs Golden potatoes, skinned.
Butter to taste
Salt to taste
Chives, chopped for garnish

Directions:
Directions:
Add Half and Half in a pan. Bundle together shallot, thyme, bay leaf and add to pan. Grate garlic and add to pan.Place over very low heat to seep, not even simmer.

Boil potatoes like normal. Drain. Mash, but don’t overdo it. Add back to the heat to remove excess water. Add three pats of butter and some salt.

Slowly pour in hot half and half mixture till get a creamy consistency.

Topped with chopped chives.
