3 T. - fresh lemon juice
2 T. - extra virgin olive oil
1 - garlic clove, minced
½ tsp. - cumin, ground
½ tsp. - black pepper, freshly ground
1 (19 oz.) can - black beans, rinsed & drained
1 c. - fresh OR thawed frozen corn kernels
2 stalks - celery, diced
1 - green bell pepper, diced
1 - red bell pepper, diced
½ - red onion, finely chopped
¾ c. - reduced-fat Monterey Jack cheese, cubed
