10 ounces (2 cups) all-purpose flour
1 tablespoon granulated sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
7 tablespoons cold butter
1 cup buttermilk


Honey Butter
1/4 cup unsalted butter, softened
1/4 cup honey
Pinch salt

1. Preheat oven to 450 degrees F.

2. Whisk together the flour, sugar, baking powder, salt, and baking soda in a large bowl.

3. Dice the cold butter and add it to the flour mixture. Use a pastry dough blender to cut the butter into the flour until no large chunks remain. All the butter should be smaller than a pea.

4. Add the buttermilk and stir with a large spoon until all the flour is moistened. Use your hands to bring it together into a large ball, but be careful not to overwork the dough.

5. Place 2¼-ounce balls of dough onto a sheet pan that has been lined with parchment paper or a silicone pad. Press down on the dough to flatten the balls into domes that are about 1-inch high but keep the surface rough.

6. Bake for 14 to 17 minutes or until the biscuits are lightly browned on top.

7. While the biscuits are baking, make the honey butter by combining the softened butter with the honey and salt and whisking or mixing with an electric mixer on medium speed until homogenous. To thin the honey butter, microwave it for 10
seconds on high, then mix it again and set it aside.

8. Use a brush to apply a generous topping of honey butter to all the biscuits the moment they come out of the oven.
