1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 cup flour
1 tsp baking powder
1 tbsp pumpkin pie spice
1/2 tsp salt
1 cup chopped nuts
1/4 cup powdered sugar

Filling

1 cup powdered sugar
6 oz soft cream cheese
4 tbsp soft butter
1/2 tsp vanilla

Directions:
Directions:
Beat eggs for 5 minutes. Beat in sugar. Stir in pumpkin and lemon juice. Sift together flour, baking powder, pumpkin pie spice and salt. Fold into pumpkin mixture. Spread onto greased and floured 15" x 10" sheet cake pan. Top with chopped nuts. Bake at 375º for 15 minutes. Turn onto thin kitchen towel and sprinkle with powdered sugar. Roll up towel and cake and let cool. Combine last four ingredients to make the filling. Unroll cake and spread with the filling. Roll cake and filling without the towel. Chill in refrigerator. Cut into one inch thick slices.
