3 Cups regular oatmeal
3/4 Cup pecans (or walnuts)
3/4 Cup almonds (sliced)
1/2 Cup coconut
1/2 Cup all-purpose flour
1/2 teaspoon salt
1 teaspoon cinnamon
Liquid:
3/4 Cup coconut oil
1/2 Cup maple syrup
1 teaspoon vanilla

Directions:
Directions:
Combine dry ingredients. Slightly warm maple syrup and stir in coconut oil till it is melted. Add vanilla. Pour over dry ingredients and mix well. Spread evenly on large sheet pan. Bake at 300 degrees for 20 minutes. Stir and bake 20 more minutes. Remove and cool completely without stirring (gives nice clumps). Store in air tight container.

The best granola recipe I've ever made!

Adaptable...have used more cinnamon, added a teaspoon of ginger, extra vanilla, and equal parts almond extract and vanilla. Have also substituted apple pie spice and pumpkin pie spice (1-2 teaspoons depending on your taste) All are really good. Unsweetened desiccated coconut instead of sweetened gives a lower carb profile...as does coconut flour instead of all-purpose flour (but it won't stick together for the nice clumps as well).

I eat it often for breakfast with Greek yogurt and stevia-sweetened blueberries.
