¼ c. - extra virgin olive oil
3 T. - honey
4 - salmon filets (4 to 6 oz. each)
1½ c. - well chopped pecans
½ T. - dried or fresh parsley, chopped
salt & pepper to taste
additional honey

Directions:
Directions:
Preheat oven to 425º. Mix olive oil with honey in a medium size bowl. Dip each filet in the honey/oil mixture. Then roll and press filets in the pecans. Place in a lightly greased 9 x 13 baking dish. Sprinkle with parsley. Salt and pepper to taste. Drizzle a bit more honey over each filet. Bake for 10 minutes, or until fish flakes with a fork.
