2eggs (separated)
1 1/3 cups white sugar
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/3 cup oil
1 cup mashed ripe bananas
2/3 cups buttermilk
1 tsp vanilla extract
1/2 cup chopped nuts
Whipped cream
Slices of bananas to decorate

Preheat over to 350º
Grease/flour 2 round cake pans
Beat egg whites until frothy..
Gradually beat in 1/3 cup of sugar. Continue beating until very stiff and glossy.
Sift remaining sugar, flour, baking powder, baking soda and salt into another bowl.
Add oil, mashed bananas, 1/2 of the buttermilk and the vanilla. Beat 1 minute at medium speed, scraping sides and bottom of bowl constantly. Add remaining buttermilk and egg yokes.
Beat 1 more minute. Fold in beaten egg whites. Fold in nuts gently. Pour into pans and bake for 30-35 minutes, cool, first with whipped cream , decorate with sliced bananas.
