Ingredients:
Ingredients:
2 sheets Puff Pastry, thawed

3 T. Dijon Mustard, divided

12 slices thinly sliced, good quality deli Ham

2 cups Gruyere Cheese, freshly grated ( substitute Swiss, Fontina, or sharp cheddar)

Parsley, freshly chopped (Thyme or chives good substitute) for garnish

Directions:
Directions:
1. Lay a large piece of plastic wrap on your counter, or two pressed together to make one. Unfold the first sheet of puff pastry in the center of the plastic, then roll it into a 10 x 12 inch rectangle.

2. Spread with 1½ T. mustard, leaving a ½ inch border on all sides. Lay 6 ham slices on top, overlapping as needed. Sprinkle with 1 cup cheese.

3. Starting at the long (12- inch) edge, roll the puff pastry into a log. Trim the ends so that they are even, then tightly wrap the log with the plastic wrap. Place in the refrigerator for 20 minutes.

4. Repeat with the second sheet of puff pastry.

5. Preheat oven to 375º and line two baking sheets with parchment paper or silicone baking mats.

6. Once log has chilled, using sharp serrated knife, carefully cut each log into ½-inch wide sections. Should get 24 slices from each log.

7. Arrange the rolls 1 inch apart on the prepared baking sheets. Bake until to puff pastry is lightly golden brown & cheese is bubbly, about 18 minutes.

8. Immediately sprinkle with chopped herb of choice. Let cool slightly before serving warm or at room temperature.

Freezes well, after baking cool, then freeze them in air tight container. To reheat just warm at 375º until heated through.
