Ingredients: 1 Sheet Puff Pastry, thawed
4 oz Cream Cheese, softened
2 oz Goat Cheese
2 Garlic Cloves, minced
2 Green Onions, chopped finely
1 T. Dried Parsley
⅛ t. Black Pepper or to taste
You can also use either dried dill, basil or tarragon in place of the parsley or added on as well. I used dill & parsley as garnish.

Directions:1. Preheat oven to 350º. Spray a muffin tin with non-stick spray.
2. Roll out puff pastry sheet and use a sharp knife to cut it into 12 rectangles. I just made indentations on the edge of the dough, 4 on the long side & 3 on the short. that let me see a rough idea of spacing before I started cutting the dough.
3. Lift each rectangle and gently stretch it into more of a square. Nestle it into the well of a muffin cup. Once they are all filled set aside.
4. In a medium sized bowl, use a hand mixer to whip cream cheese & goat cheese until creamy. Really important step!!!
5. Add garlic, green onions, and pepper and mix well. Divide cream cheese mixture evenly between puff pastry bites. 2 teaspoons of filling per cup.
6. Bake for 17 minutes, or until puff pastry is golden brown and puffed. Serve warm or at room temperature. Garnish with herbs & parsley. |
