2 6 ounce back drum fillets
¼ cup flour
2 tbsp. oil

Mustard Sauce:
1 tsp. vegetable oil
1 shallot, minced
½ cup vegetable broth
½ cup heavy cream
2 tbsp. hot mustard
1 tbsp. butter
Salt and pepper to taste

Heat the 1 tsp. vegetable oil in a small saucepan over medium heat and sauté the shallots until they are translucent. Add the broth, cream, and mustard and bring to a simmer. Add the butter and blend until smooth. Season with salt and pepper and set aside and keep warm.

Heat a cast iron skillet over medium heat. Place flour and fish in a plastic bag and shake to coat. Shake excess flour from fish and place in skillet. Cook until browned on one side (4-5 minutes). Gently flip and continue to cook for an additional 3-5 minutes until cooked through.

Place ½ of sauce between two plates and place fish on top. Drizzle the remaining sauce on top of the fish.

The largest fish I ever caught in the surf at Island House in Corpus Christi, TX was a 2-3 pound black drum. It was delicious!
