One pork tenderloin
½ tsp. ground black pepper
2 tsp. kosher salt
6-8 pieces bacon
2 tbsp. olive oil
3 cloves garlic, minced
½ - ¾ cup balsamic vinegar
½ cup strawberry preserves
¾ cup fresh strawberries, quartered

Preheat grill to 450º F.
Sprinkle the pork tenderloin and then wrap bacon slices around tenderloin completely covering it and secure it with toothpicks.
Turn off one side of the grill and place pork on unlit side and grill for 25-30 minutes.

While cooking pork, sauté minced garlic in the olive oil over medium heat until golden, 2-3 minutes. Add the vinegar and boil the mixture for 5 minutes. Turn off heat and stir in the strawberry preserves. Reserve ½ cup of mixture for basting. Mix the remaining mixture with the fresh strawberries.

Baste the pork with the garlic / vinegar / strawberry mixture and move to the lit side of the grill. Grill for 5 minutes more, turning once.

Slice the pork tenderloin and serve with the strawberries.

I have made this in the oven and it came out delicious. It also reheats very well.
This meal was instrumental in enabling us to buy Unit 309 at Island House. After Colonel John and Helen Joyce had passed away, I called their niece to offer to buy the condo and she remembered me as I had taken this meal to John and Helen when she was visiting.
