2 tablespoons unsalted butter
2 tablespoons arrowroot
1 ½ cups milk
2 ½ teaspoons salt
2 big pinches ground nutmeg
2 big pinches freshly ground pepper
2 cups shredded white or yellow cheddar cheese
2 tablespoons grated Parmesan cheese
½ pound Barilla Gluten Free Elbows Macaroni

Directions:
Directions:
Melt the butter in a saucepan. Add flour and whisk together until the mixture is smooth and bubbling but not browned, about 1 minute. Increase heat. Stir constantly and pour milk into the pan. Cook until the mixture is smooth, thickened, and bubbly. About 6 minutes. Add the cheese. Add salt and pepper and nutmeg. Next, add the cheeses. Stir until the cheese has melted and the sauce is smooth. Cover the pan and keep warm until pasta is ready. Cook pasta. Add drained pasta to the saucepan with cheese sauce. Stir until well coated. Ready to serve.
