6 cps cubed sweet potatoe
2 tbssp butter
2 eggs beaten
3 tbsp flour
1 Tbsp brown sugar
1 tbsp baking powder
3/4 tsp salt
1/8 tsp pepper
pinch of nutmeg
1/2 cp fine crumbs (I like ground corn flakes)
2 tbsp melted butter

Directions:
Directions:
Boil sweet potato drain and mash. Add butter and eggs beat well. Combine flour sugar, baking powder, salt, pepper and nutmeg, stir. Butter a casserole dish, put in the mixture. Combine crumbs and butter sprinkle on top.

Bake at 375 deg for 25 minutes or until light brown on top.

I sometimes sprinkle brown sugar on top and chopped pecans instead of bread crumbs. Also use maple syrup instead of brown sugar too.
