1/2 cup olive oil (not Extra Virgin)
2 cups sugar
2 eggs
2 cups all purpose flour
3/4 cup cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1 cup whole milk
1 teaspoon vanilla
1 cup boiling coffee

Directions:
Directions:
Preheat oven to 375 degrees.

Grease two 9 inch cake pans.

Combine all ingredients in a mixer leaving the oil and coffee for last. When adding the boiling coffee, as the last ingredient, be sure to add it to the mixture very slowly.

Bake for 25 - 30 minutes or until toothpick comes out of cake clean.

This recipe is also used for a chocolate cannoli cake. Using the cannoli cream recipe on pg. 95, spread cannoli cream on top of cake and middle layer. Ice side of cake with chocolate icing recipe on pg. 68.
