1/2 t. coconut extract
8 oz. cream cheese, soft
1/2 c. powdered sugar
2 c. heavy cream

Cream first 3 ingredients really well, slowly add cream and whip until peaks form.

Personal Notes:
This is not a thick frosting, but it is great with Coconut cake and fresh berries. I like to serve this frosting on individual pieces and top with berries.
