1 beaten egg, 3/4 c. soft bread crumbs or 1/4 c. fine dry bread crumbs, 1/4 c. milk,1/4 c. minced onion or onion powder, dried herbs i.e. parsley, sage, thyme, 1 lb. ground meat or a combination, 1/2 t. salt and 1/4 t. pepper, 2 T. bottled catsup or chili sauce.

Mix all ingredients well except for catsup. Make a 7x3x2 inch loaf. Bake at 350º oven till no pink remains, 45-50 minutes. Top with catsup or desired sauce.

This is a basic meatloaf. I usually make multiple recipes. Using a combination of meats and or different sauce can make it a fancy meal. Meatloaf is a great freezer meal and really can be made any size, just adjust cooking times. Jeff and I in our empty nest phase of life have been making baby meat loaves. But if unexpected company arrives we just pull out as many as needed.
