2 large eggplant
1 lemon
1 garlic clove, crushed (optional)
1 tsp salt
1/2 cup of tahini

Drizzle of olive oil

Directions:
Directions:
Char the eggplants on a gas hob for about fifteen minutes. Turn every few minutes until well done (or grill in oven/grill after making small holes in skin)

Let eggplants cool down then peel and put in a colander to drain

In food processor or mixer blend the eggplants then add the lemon, tahini, salt and garlic and mix.

Adjust seasoning if necessary.

Drizzle with good olive oil just before serving.
