8 oz. butter, divided
28-32 oz. bag frozen hash browns
1 med. onion, diced
¼ cup flour
2 cups chicken broth
1 cup milk
salt, pepper to taste
1½ cup shredded jack cheese
½ cup shredded cheese
¼ cup Parmesan cheese
1 cup sour cream

Directions:
Directions:
Oven 350º. Grease 9X13" pan with 1 Tablespoon butter. Melt 6 Tablespoons butter. Cook onions 3-4 minutes til soft. Add flour. Stir. Cook 1-2 minutes. Whisk in milk. Stir until smooth. Add broth. Simmer and allow to thicken, about 3 minutes. Season to taste. Turn off heat and add cheeses and sour cream. Add hash browns and mix. Put in casserole. Cover and bake 20 minutes. Uncover, and cook 15 more minutes. Let rest 5 minutes before serving.
