3-4 pounds butternut, peeled, seeded, 1 inch chunks
2 T. oil
salt and pepper
12 c. chicken stock
2 1/2 c. chopped onions
1 c. wild rice
3/4 lb. smoked kielbasa type sausage, cut into 1/4 inch
2 c. fresh corn
1 1/2 c. half and half
1 T. chopped parsley leaves

Directions:
Directions:
Toss butternut with oil, salt and pepper. Roast at 400º 45-60 min. Cool completely. Puree with 2 cups chicken stock. Bring 4 cups stock and 1/2 c. of the onions to a simmer, stir in rice and cook till rice is tender and liquid is absorbed (1 hour ) stirring occasionally. Set aside. Brown sausage in 1 T. oil, add remaining onions and corn. Season with salt and pepper. Saute for 3 minutes. Add remaining stock and squash puree. Bring to a boil, reduce heat and simmer 20 minutes. Skim fat. Stir in rice and cook 10 minutes. Remove from heat and add half and half. Stir in parsley and serve.

This soup has many parts, consider making ahead and using the parts in different recipes throughout the week. Roasted squash one night or wild rice another night.
