Thin rice noodles
Butter lettuce
Red or green cabbage, finely shredded
Carrot, finely shredded
Cucumber, finely shredded
Jalapeno, finely shredded to taste
Green onion, sliced thin and cilantro and mint, minced
Baby shrimp

Peanut sauce (found in sauce section)

Follow instructions on rice paper. Follow instructions on thin rice noodle package. On a wet towel, start by placing a few pieces of lettuce about one-third from the bottom of the circular wrapper. The width of your fillings will determine the width of your roll. You want to keep a couple of inches open on the two sides for wrapping purposes. (The rice paper usually has very helpful instructions). Then, add additional ingredients. Gently pull the bottom of the wrapper up and over the lower portion of the filling. Try to get it tight but be careful not to rip your wrapper.

I have fond memories of James and Micah making these rolls. They are a very refreshing meal and can easily be made ahead. Play with your ingredients and combos that you like, you don't have to add the shrimp but it does make these rolls a main dish rather than an appetizer.
