Quinoa Crunch Recipe

1 c tricolor quinoa, rinsed and drained
½ c almonds, rough chopped
2 Tbsp chia seeds
1 Tbsp sesame seeds
2 Tbsp raw honey
2 Tbsp pure vanilla extract
1 egg white
Pinch of salt
½ Tbsp extra virgin olive oil

Preheat oven to 375º F
Line cookie sheet with parchment paper

While rinsing and draining the quinoa, heat oil in medium saute pan

Add drained quinoa to saute pan, stirring frequently until it stops making noise (draws water out and ensures a crunchy finished product)

Turn burner off once noiseless

Chop and add almonds to pan

Add sesame seeds and chia seeds to pan and stir together

In a small bowl whisk together egg white and honey

Once completely add vanilla and salt, whisk until thoroughly combined

Pour mixture into pan and combine with ingredients in pan

Transfer to baking sheet evenly spreading out to edges (make sure edges and middle are same thickness to prevent burnt edges)

Bake for 10 minutes and rotate pan then bake an additional 5 minutes or until lightly golden brown

Transfer to a cooling rack and allow to cool

Enjoy by itself, topping for salad, in yogurt or oatmeal
