1/3 c. butter
1-1/3 c. brown sugar
1 egg
1 c. cooked pumpkin
1-2/3 c. cake flour*
1/4 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/3 c. buttermilk
1 med. apple, peeled & chopped
1/3 c. chopped walnuts or pecans

Directions:
Directions:
Cream together butter & sugar. Beat in egg & pumpkin.
Sift together dry ingredients and add to pumpkin mixture alternately with
buttermilk. Stir in chopped apple & nuts. Put into a greased 9" pan
and bake in a preheated 350ºF oven for 35-40 minutes. Cool.
Ice with Cream Cheese Icing.

*note: to make cake flour, replace 1 tbsp of all purpose flour with
cornstarch for each cup of flour.
 

Cream Cheese Icing

4 oz. cream cheese
1/3 c. butter
1/2 tsp. almond extract
2 c. icing sugar

Beat cream cheese and butter until creamy.
Add almond extract and icing sugar. Beat until smooth.
