2 tbsp. olive oil, divided
8 boneless skinless chicken thighs (4 oz. each)
1 tsp. salt
1 tsp. pepper
1/2 c. Marsala wine
8 oz. sliced fresh mushrooms
1 medium sweet red bell pepper, thinly sliced
1 medium sweet onion, thinly sliced
1 can (14.5 oz.) diced tomatoes, undrained
1/2 c. golden raisins
2 tbsp. capers, drained
1/4 c. chopped fresh basil
Hot cooked couscous

Directions:

1. In a large skillet, heat 1 tbsp. olive oil over medium-high heat. Sprinkle chicken with salt and pepper; brown chicken on both sides in batches, adding oil as needed. Transfer the chicken to a 5-6 qt. slow cooker.

2. Add Marsala wine to the skillet, stirring to loosen browned bits; pour into the slow cooker. Stir in the mushrooms, red pepper, onion, tomatoes, golden raising and capers into the slow cooker.

3. Cook, covered on LOW for 4 hours until the chicken and vegetables are tender. Sprinkle with basil before servings with the hot cooked couscous.

NOTE: If you don't like dark meat chicken, use boneless skinless chicken breasts. Pound the breasts and then start step 1. Usually 1 pounded chicken breast can be cut in half and makes a full serving.
