1½ -2 lbs Ground Beef

1 t. Seasoned Salt or Sea Salt

1 pkg. (1¼-oz) Taco Seasoning

1 can (14½-oz) Diced Tomatoes, undrained

1 can (15-oz) Tomato Sauce

1 can (4-oz) chopped Green Chilies

2 cups (16-oz) 4% Cottage Cheese

2 Eggs, lightly beaten

10 flour Tortillas, torn

3½- 4 cups Monterey Jack Cheese, shredded

Additional spices can be added for more flavor; Cumin, Chipotle chili powder, etc etc...

1. In a large skillet, cook beef over medium heat until no longer pink; drain.

2. Add the seasoned salt, taco seasoning packet, tomatoes, tomato sauce, and chilies. Reduce heat, simmer, uncovered for 15 - 20 minutes.

3. In a small bowl, combine cottage cheese and eggs. Stir to combine.

4. Take the pile of 10 tortillas and using a sharp knife cut into strips

5. In a greased 13" x 9" baking dish, layer:

*Half the meat sauce
*Half the torn tortillas
*Half the cottage cheese mixture
*Half the monterey jack cheese mixture

6. REPEAT Layers

7. Bake uncovered at 350º for 30 minutes or until bubbly. Let stand 10 minutes before serving.
