3 tbsp butter
1 shallot finely chopped
1 tsp black pepper
1/4 tsp salt
1 cup fresh breadcrumbs
1 tbsp fresh thyme finely chopped
1 tbsp the grated parmesan cheese.
1 pkg of the Rosenburg Blue Cheese with pear - this is the key ingredient



Directions:
Directions:
Melt butter in frypan and add shallots pepper, salt and cook until soft. Conbine in a small bowl shallot mixture, breadcrumbs thyme and parmesan and blue cheese and set aside.
Cut tenderloin lengthwise so it opens like a book but do not cut all the way through.
Place stuffing into slit and close pork up and tie with twine at 1.5 inch intervals. Place in roasting pan and cover with foil. B
Bake in 375 oven for 30 minutes .
Remove foil and bake an additional 20 min or until cooked through.
Stand 20 minutes or until cooked through. Stand at room temperature for 10 minutes before slicing.

Serve with veggies rice or potatoes. Very tasty.
