3 poblano peppers
1 onion, chunked
2-3 garlic cloves
1/4 cup veggie or chicken stock
1 cup milk
3 tbsp butter
a sprinkle of flour
2-3 chicken breasts, thinly cut
Pepper jack or cheddar cheese, or both
Cumin
Cilantro
Salt and Pepper

Directions:
Directions:
1) Place the poblanos, onion chunks, and garlic onto a lined baking sheet and drizzle with olive oil and place into the oven, which is heated to 425º. Roast them for 20- 30 minutes or until tender and charred
2) In a food processor place your roasted veggies, cilantro, stock, cumin, salt and pepper. Mill up until it is a liquid consistency
3) In a large pot put roughly 3 Tbsp. of butter, and sprinkle in your flour, to create a rue. Stir for roughly 3-4 minutes before adding milk. Continue stirring until blended and smooth
4) Add food processor contents to the milky rue, and let cook for 20-25 minutes over low heat. Make sure to constantly stir
5) In a medium fry pan, brown your chicken breast, which are seasoned to your liking, and transfer to a baking dish once browned
6) Pour the sauce over the brown chicken breast and sprinkle cheese over the entire top
7) Bake at 375º for 20 minutes, and let cool before serving
