Bami's Pumpkin and Spice Roll Recipe

3 eggs
1 C sugar
2/3 C canned pumpkin
1 tsp lemon juice
3/4 C sifted flour
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
2 C chopped walnuts
1/2 C powdered sugar
Filling:
1 C powdered sugar
6 oz cream cheese (I usually use 1 whole bar)
1/4 C butter, softened
1/2 tsp vanilla

Directions:
In a large bowl, beat eggs for 5 minutes at high speed. Gradually add sugar, mixing well. Stir in pumpkin and lemon juice.

In a separate bowl, combine flour, cinnamon, baking soda, ginger, nutmeg ad salt. Fold into pumpkin mixture.

Pour into greased 15"x10"x1" jelly roll pan (rimmed large cookie sheet) which has been lined on the bottom with waxed paper (I usually line it with parchment paper). Spread cake mixture into pan and top with walnuts, if adding. Bake at 375 for 15 minutes.

Turn cake onto a large kitchen cloth towel which has been sprinkled with powdered sugar. Roll the towel and cake together to form a roll. Cool with seam on the bottom.

Combine all filling ingredients and blend until smooth. Unroll cake; spread with filling. Roll up and chill well.

I tend to make 2 of these at the same time since it takes little effort to double the recipe and then I freeze one for later in aluminum foil. I also then make 3x the filling recipe for them so they each come out with 1.5x the filling.
