2 cups Martha White self-rising white cornmeal
1 1/2 cups buttermilk
1 egg
1 tsp sugar
1/4 tsp salt
1/2 cup vegetable oil, divided in half

Directions:
Directions:
Preheat iron skillet with 1/4 cup vegetable oil in a 450° oven. Add sugar and salt to cornmeal. Mix.

Mix the egg into buttermilk. Combine with the cornmeal mixture. Use a fork to get out all the lumps. Add 1/4 cup vegetable oil.

Once thoroughly combined, pour a touch of hot oil into the batter. Mix until smooth.

Pour into a hot skillet.

Bake for 22 minutes at 450°.
