8 large carrots cut in strips
1 large cauliflower
2 tbsp butter
2 tbsp flour
1/4 tsp prepared mustard
1 can chicken broth
1/2 cup whipping cream
1 1/2 cup shredded swiss cheese, or velveta and sprinkle with swiss
2 green onions chopped

Directions:
Directions:
Boil veggies separately until tender, drain and plunge into cold water.

Melt butter, saute onions until tender but not brown. Stir in mustard and flour til bubbly, remove.
Add broth and cream, cook until thick.
Add 1 cup cheese.
Mix veggies and saute mix in casserole dish. Sprinkle with remaining cheese. Can use swiss for this if velveta used originally.

Bake at 350º

Can be made ahead and refrigerated, increase cooking time to one hour.
