1 lb. dried white navy beans
1 lb. ham bone
2 1/2 qt. water
1 lg. russet potato (8 oz.)
3 c. chopped celery
3 c. chopped onion(about 3 medium onions)
1 garlic clove minced
3 tsp. kosher salt
3/4 tsp. black pepper
1/4 c. chopped cilantro

Directions:
Directions:
1. Put beans in large pot, add water 2" above beans and bring to a boil. Cover, remove from heat and let stand 1 hour. Drain beans.

2. Put beans, ham hock and water in large dutch oven.

3. Rinse potato, pierce with fork and wrap in paper towel. Microwave on high until tender, about 8-10 minutes. Peel and mash potato. Stir potato, celery, onion, garlic, salt and pepper into bean mixture. Simmer over medium low until beans are tender, about 1 hour.

4. Remove ham bone. Remove and discard bone and fat. Dice meat and stir into bean mixture.

5. Top each serving with cilantro.
