1 (4-5 lb) loin roast of pork
1/2 c apple juice
1/2 c port wine
1 tbsp soy sauce
1/2 tsp ginger
1/2 tsp garlic powder

Directions:
Directions:
Combine apple juice, wine, soy sauce, ginger and garlic powder in a dish large enough to hold the roast. Mix well. Place roast in dish; marinate overnight, in the refrigerator. Turn occasionally. At roasting time, remove roast from marinade and put in roasting pan. Insert meat thermometer. Roast uncovered at 160ºC (325ºF) for 2 1/2 to 3 hours or until meat thermometer registers 80ºC (170ºF) to 85ºC (185ºF). Baste with marinade during last hour of cooking time.
