Ingredients: Dough 4 c. flour 1 c. butter 1/2 tsp. salt 1 c. cold water
Filling 1 lb. almond paste 2 1/4 c. sugar 3/4 c. fine bread crumbs 4 eggs 1 tsp. almond extract
egg white, slightly beaten raw sugar for topping

Directions:Cut together the first 3 ingredients as for pie crust. Add water, mix only until slightly blended. Do not overmix. Cover and refrigerate overnight.
Filling. Mix the first 3 ingredients into a fine, crumbly mixture. Add eggs and almond flavoring. Refrigerate the filling overnight in a covered container.
To form letter: make a cardboard patter 12 x 3". Use this pattern to cut the shape for each letter out of dough. Divide the dough in half. Roll each half into a rectangle 12 x 18" with pattern, cut 6 strips. Work with enough flour to keep the dough from sticking. Keep the unrolled dough in the refrigerator. meanwhile divide the filling into 12 equal portions. Roll each portion into a 1/2" thick rope between your hands, put the strip of filling don the center of the dough. Repeat these steps with the rest of the dough. Place parchment paper that has been sprayed on a large baking sheet. Brush with beat egg whites over the letter and sprinkle with raw sugar. Bake at 350º for 25 minutes or until lightly browned. Let cool. Makes 12 letters. |
