2 3/4 c. flour
2 t. cream of tartar
1 t. baking soda
1/4 t. salt
16 T. unsalted butter at room temp
1 3/4 c. sugar, plus more if needed
2 T. ground cinnamon, plus more if needed
2 large eggs

Preheat the oven to 400º, with one rack in top 1/3 and one rack in bottom 1/3 of oven. Line baking sheets with parchment paper.

Sift together flour, cream of tartar, baking soda, and salt; set aside. In your mixer bowl combine butter and 1 1/2 c. sugar. Beat until light and fluffy. Add eggs, and beat to combine. Add dry ingredients, and beat to combine. At this point, chill the dough for an hour or overnight before scooping.

In a small bowl, combine remaining 1/4 c. sugar and cinnamon. Use a small ice cream scoop to form balls and roll in cinnamon sugar. Place on prepared cookie sheets 2 inches apart. Bake until the cookies are set in the center and begin to crack (they will not brown), about 10 minutes, rotating after 5 minutes. Let cookie sheet rest 5 minutes on cooling rack before transferring cookies to cooling rack.
