1lb Baby Potatoes

Oil Mixture
¼C Olive Oil
2T Butter (melted)
3 Cloves garlic
1T Italian Parsley
2T Lemon Juice - freshly squeezed
2T Honey
Freshly ground pepper - to taste

Directions:
Directions:
1. Preheat oven to 375º (200C)
2. Cut slits on the potatoes, do not cut through them. mix all ingredients in the Oil Mixture together.
3. Place the potatoes on a parchment lined cookie sheet and brush with the Oil Mixture. Make sure to brush inside the slits of the potatoes. Save some mixture for basting.
4. Roast the potato for 1 hour, basting the oil mixture at 30 minute intervals, basting with the mixture each time.
5. Serve immediately after roasting.

As ovens and stoves vary somewhat - monitor the progress of the potatoes as the roast. You may need more roasting time. Also you may wish to heat the potatoes at a higher heat for the last portion of the roasting to give them something of a charred look.
