3 eggs beaten
1 cup white sugar
3 T. milk
1 scant cup of flour
2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla or lemon extract

Directions:
Directions:
Preheat oven to 375F. Line a jelly roll pan or 15x10x1 inch cookie sheet with wax paper or parchment paper.

Beat together the eggs for 5 minutes or until very thick and lemon colour.
Gradually beat in 1 cup sugar with the beaten eggs.
Blend in vanilla and milk to the egg mixture.
Gradually add flour, baking powder and salt to egg mixture. Beat until smooth.
Pour batter into pan, spread evenly.

Bake for 12-15 minutes until cooked.
Loosen edges from pan and invert onto a clean tea towel which has been sprinkled with icing sugar. Carefully remove paper and trim off stiff edges.
While cake is still hot, roll cake and towel from narrow end, Let cool on rack.
When cool unroll and spread with jelly or lemon filling. Roll up again. Leave until set and slice to serve.
