1 c. sugar
1 T. flour
2 eggs + 2 extra egg yolks
2 c. heavy cream
1t. vanilla
2 8 oz. pkgs, cream cheese softened
1 c. canned pumpkin
1/2 c. expresso or dark roast coffee
3T. brandy
3 pkgs. lady fingers
1 more c. heavy cream
3T. powdered sugar
dash of nutmeg
cinnamon or pumpkin pie spice

Whisk flour and sugar together in a heavy saucepan Whisk eggs, yolks and cream in a bowl Whip the egg mixture into the sugar mixture and cook over low heat whisking continuously until very thick. approximately 15 min. Remove from the heat and whisk in the vanilla. Put in a bowl. Place plastic wrap directly on the pudding and place in the refrigerator to cool approximately 2 hrs. Beat the cream chess until light and fluffy. Add the pumpkin into the cooled pudding mixture. Add the cinnamon or pie spice to taste. Set aside.
Add the brandy to the coffee. Separate the lady finger and brush the insides with the coffee mixture. Line a 10" springform pan with the lady fingers. Fill the bottom completely. breaking the fingers to fill in the wholes. Spread one third of the cream cheese mixture on the bottom of the pan. Add half of the remaining lady fingers. Spread half of the cheese mixture and then layer with the rest of the lady fingers. Add the balance of the cheese mixture and set in the refrigerator while you whip the last cup of heavy cream with the powdered sugar until very firm Put in a piping bag and pipe around the edge of the mousse. Garnish with the nutmeg. Refrigerate until service.
