Ingredients: ½ lb. unsalted butter 1-⅛ c. honey 1-¾ c. brown sugar 1 beaten egg .75 oz. ground almonds (25 g) orange rind of ¼ of an orange
¼ tbsp. coriander ¼ tbsp. cinnamon ½ tbsp. ground star anise ⅛ tsp. allspice ½ tsp. nutmeg ¼ tsp. salt ⅛ tsp. pepper
1 tbsp. warm water ½ tbsp. potassium carbonate
5 c. flour, sifted

Directions:Over low heat, melt butter, honey & brown sugar. Pour into the bowl of your 6 qt. KitchenAid mixer. Add beaten egg, ground almonds & orange rind. Dissolve potassium carbonate in warm water and add to batter. Add spices to 2 c. of the flour and sift into the batter. Add the remaining flour until thoroughly incorporated. Place dough in a air tight container & place in fridge overnight. When ready to bake: Bring dough to room temperature. Roll out and cut out shapes and decorate, if desired. Bake at 350º F oven for 10-12 minutes. |

Notes: This is my mom's recipe (Anne Bredin). This is only 1/4 of her recipe, but it mixes beautifully in my mixer. No need to have (literally) 'man power' around to mix it.....which is what my dad (Archie Bredin) did for many years.....until Gord Hohensee took over the job for him. First time I tried this, I made Christmas cookies, hearts for Valentine's, and Easter cookies out of the batch. Made it last right into spring!! (put the hearts and Easter ones in the freezer, of course)
