1 tablespoon extra-virgin olive oil
1 celery stalk, finely chopped
1 carrot, chopped
2 shallots, chopped
3 fresh thyme springs
3/4 teaspoon salt
4 cups low-sodium chicken broth
1 1/2 cups pastina
1 cup frozen peas, thawed

Directions:
Directions:
In a Dutch oven over medium heat, add the olive oil, celery, carrot and shallots and cook until softened, stirring frequently about 5 minutes.

Add thyme, salt, chicken broth and 1 cup water. Bring to a boil and simmer 8-10 minutes. Next, add pasta and cook according to package instructions and liquid is slightly thickened.

Remove thyme sprigs and stir in peas.

Serve topped with grated Parmesan or Pecorino Romano cheese.
