Ingredients: 20 Jalapeños cut half lengthwise, scoop out seeds 8 oz Mascarpone Cheese (can use cream cheese as substitute) ½ cup fine chopped red onion ¼ - ½ cup fine chopped mix peppers (vary mix based on desired heat – Serrano, cayenne, habaneros, long hot, etc...) 1 ½ Tbsp chopped garlic 1 lb spicy ground sausage 2 Tbsp chopped Rosemary 1 Tbsp cayenne pepper (optional to taste) 1 pkg of blend grated cheeses ½ lb (1/2 pkg) of bacon chopped ¼ cup chopped dried cranberries

Directions: Roast jalapeños, cut side down for 3-5 mins remove and then let them cool In large skillet cook bacon until crisp and remove – drain on paper towels In skillet cook ground pork and break up to small chunks – remove and drain on paper towels Drain all but 1 Tbsp of grease and then add onion, pepper and sauté until soft then add the pork sausage, rosemary and cayenne - Take off heat. Add cranberries and crumbled bacon as soon as take off heat and stir. While still warm add mascarpone in small portions add stir to bind mixture, Spoon mixture into jalapeño canoes and place on cookie sheet, once all stuffed sprinkle grated cheese of “canoes” then bake in oven for about 8 mins until cheese is melted and “canoes” warmed. |
