2-1/2 cups granulated sugar
1 cup light corn syrup
2 egg whites
1/2cup. water
1 tsp salt
1 tsp. vanilla ( I use clear vanilla so it won’t discolor the candy)

Directions:
Directions:
Combine sugar, salt,syrup,water in medium size sauce pan. Cook until temperature reaches 260 degrees on candy thermometer. While mixture is cooking, beat egg whites until stiff peaks form. Then add your candy mixture to egg whites gradually while beating with an electric mixer,add vanilla. Beat until candy becomes dull in appearance. Then drop spoonfuls onto waxed paper or buttered cookie sheets.

I use a cookie scooper or very small ice cream scoop that has been well buttered; it makes “pretty” candy!!
