10 ounce crawfish tails
2 tsp creole seasoning
1/4 chopped and minced onions
3 cloves garlic, chopped and minced
6 ounce Andouille sausage cut into small pieces
5 tbs. Worcestershire sauce
8 ounce shredded mozzarella cheese
20 egg roll wrappers

Directions:
Directions:
Put creole seasoning on crawfish and toss to cover. Sauté onions and garlic in Worcestershire sauce for 2 minutes. Add crawfish and sausage. Sauté for 3 minutes. Drain and allow to cool. Mix cheese and cooled meat mixture. Place egg roll wrapper on a dry surface. Place two tablespoons of the meat mixture and cheese mixture into the middle of the wrapper. Fold the sides of the wrapper 1/2 inch over the mixture. Wet one end and roll toward that end. Press to seal. Fry rolls at 375 degrees until golden brown, about 2 minutes.
